
Garlic Scapes – What Are They?
Garlic scapes are the curly, green flowering stems that grow from hardneck garlic plants. Farmers trim them in early summer so the plant can focus on growing the garlic bulb underground — lucky for us, because scapes are a delicious seasonal treat!
They have a mild garlic flavor with a fresh, slightly grassy note — like a mix between garlic and scallions. If you’ve never cooked with them before, now’s the time to try!
How to Use Garlic Scapes
Garlic scapes are super versatile and easy to use in the kitchen. Here are some of our favorite ways to cook with them:

Chop and sauté with olive oil, salt, and pepper as a simple side dish.

Grill them whole just like asparagus — toss with oil and cook until charred and tender.

Blend into pesto with nuts, parmesan, lemon, and olive oil.

Farm Stand Tip
Garlic scapes are only available for a short time, so grab them while you can! They store well in the fridge in a plastic bag or wrapped in a damp paper towel — or chop and freeze them to use all year long.
